In order to change  the Plex  video quality settings on the Amazon firestick/4K, you need to find the settings menu at the bottom of the home screen in the left hand column in Plex.

Settings > Video Quality >

  • Adjust automatically > ON
  • Home streaming > Maximum
  • Remote streaming > Maximum
